From the sack to the snap

Five things happen before a bar is a bar.

  1. 01

    Sort the beans

Every sack is opened by hand. Flat, cracked or mouldy beans go; the rest are weighed into 25-kilo batches.

  2. 02

    Roast, low and long

A drum roaster at 118 degrees for 38 minutes for Madagascar; Ecuador takes six more.

  3. 03

    Crack and winnow

Roasted beans are cracked open and the papery husk is blown away. What remains is the nib.

  4. 04

    Conche for three days

Nibs and cane sugar grind for 72 hours in a stone melangeur. Gritty turns glossy.

  5. 05

    Temper and score

Heated, cooled and warmed again to 31.5 degrees. That is the snap, the sheen, the score lines.

Notes that came back

What people wrote after the box arrived.

For my father
I bought the 72 for myself and the flight for my father. He rang to say it tasted like the chocolate his grandmother kept in a tin.
Layla H., Dubai
Corporate, Eid
Twenty boxes for the office, each with a different card. Nobody got the same box and everybody thought theirs was the best one.
Omar S., Abu Dhabi
Just because
Arrived at four in the afternoon in July and the pieces still snapped. I do not know how, and I have stopped asking.
